Cheater Cheater....Pumpkin eater????

No pumpkin here!  Seems bugs have entered my home.  Not the creepy crawly kind but the sickness kind instead. :(  Took my 5 month old to the ER (ped doc couldn't get her in until Thursday) to be tested for Influenza.  Thank goodness she tested negative...however, that doesn't change the fact that she is miserable!  Poor thing.  After spending almost 2 hours there I was in no mood to cook so we ordered Chinese take out. Good thing I did; as when I got home I found my 2.5 yr old on the couch not feeling well.  She went to bed without dinner...her choice not mine...at 7pm!  So, time to get the exterminator out!  Where's my Lysol!?!?!?
Until we get back to our regularly scheduled program...STAY HEALTHY!

Fajita Trio


Chili's has inspired me!  I LOVE their Fajita Trio.  A fajita with steak, chicken, AND shrimp!  I can never decide between the them....so, I just get all three.  Tonight I made them at home!  YUM!  I used a top sirloin steak, 2 chicken breasts, and a couple dozen medium size shrimp.  I used a packet fajita seasoning, yellow onion, and a bit of green pepper.  Confession: I don't eat the onion or pepper.  I pick it out. So I don't use much when making my fajitas. I found the trick to making this dish and using just one pan is you have to start cooking the steak, then when it's getting close to done, add the chicken.  Once the chicken and steak are completely done add the shrimp, since they only take a minute to warm up.  This way you don't get anything over cooked and turn it into rubber!  Over cooked shrimp=YUCK! :)
The fajitas turned out great.  Hubby went for 2nds (always a good sign).  I don't think my 2 year old is feeling well today.  She was up at 8:00 only to ask to go back to bed by 10:00. She slept for an hour then took another 3 hour nap in the afternoon and was in bed again by 8pm!  She's usually a good eater and loves tacos but she hardly touched anything all day :(  Guess we'll see what tomorrow brings.

Getting Started

Here we are!  I've finally taken a leap of faith and started a blog!!!  I've been talking/thinking about this for a while now.  During the last half of 2012, with the support of my husband, I made a life changing decision for 2013.  I volunteered for the midnight shift! I have been working the afternoon shift for the last 6 years.  I now have 2 beautiful little girls (currently 5 months and 2.5 yrs) and an amazing husband and I HATE leaving them in the evenings!  I want to be a "family" and have "family time" together instead of my husband and I raising the girls as single parents.  I have them all day while he's at work...then he has them all evening while I'm at work.  Now, I work while everyone is sleeping. I take the girls to the babysitter and sleep during the day while hubby is at work, then we get to spend the evenings all together!  Another GREAT aspect of this schedule is I will now be able to cook for my family!!!!  I love cooking!  I think dinners around a dinner table are very important in a family.  TV goes off, cell phones get put away, it's family time!  I love entertaining and cooking for a group as well!
This blog is just for fun.  My intention is to blog about food (mostly dinners) I make.  Sharing recipes, pictures, and maybe a review here or there from my husband, girls, and anyone who happens to stop by for a bite.  I may have to throw in a few antics from my 2 year old!  She's a nut and you never know what may come out of her mouth!  She keeps us laughing!
You're probably wondering where the name of this blog came from.  Well, it seems I always come up with a great idea for something I'd like to make so I jump right in and get started...however, I never check to see if I have all the ingredients I need...and I usually don't! LOL  So, I end up substituting whatever I can find and pray it turns out! :-)  There you have it  Substitution and a Prayer!
